Aztecs Rock Hunger A.S. Competition!

The Aztecs Rock Hunger campaign is officially underway! Aztecs Rock Hunger is an annual university-wide campaign led by A.S. with the goal of fighting food and nutrition insecurity and raising as much money as possible for the Jacobs & Cushman Food Bank, A.S. Food Pantry and SDSU Economic Crisis Response Team. This year, the goal is $100,000!

The campaign comes at a crucial time because despite COVID-19 numbers lowering, the need for food remains extremely prevalent. A lasting impact from the pandemic and inflation have led to the A.S. Food Pantry seeing a record-breaking number of students weekly and the Economic Crisis Response Team assisted an estimated 2,000 students last year. 28% of San Diego’s residents live below the federal poverty level and more than one in four adults and one in three children are food insecure.

We are excited to announce an A.S. competition for the final push of the campaign! Compete against other A.S. departments with the winning department receiving breakfast on behalf of A.S. for their entire team!

Now through Nov. 8, you can make a difference in the lives of SDSU students and our greater SDSU community. Please make sure to include your A.S. department name in your donation to count for the competition.

Rock the Vote!

Have you Rocked the Vote yet?

Rock the Vote is an A.S. initiative centered around increasing the voter and civic engagement of SDSU students. RTV is committed to ensuring that everyone has the opportunity, education and resources to vote safely and securely and be advocates for their community.

The California Midterm elections are on Nov. 8! Make sure you participate in the upcoming election and make your voice heard!

You can vote on-campus in Templo Mayor, located on the second floor of the Union. Hours of operation are as follows:

Saturday, Nov. 5 | 8 a.m. - 5 p.m.
Sunday, Nov. 6 | 8 a.m. - 5 p.m.
Monday, Nov. 7 | 8 a.m. - 5 p.m.

A.S. Celebration

Thank you to everyone for your hard work on making our A.S. celebration on Oct. 7 such a fun and successful night! Hundreds of A.S. alumni and friends gathered at Viejas Arena to celebrate the grand opening of the expanded Aztec Recreation Center, 90th anniversary of A.S. and 25th anniversary of the Viejas Arena/Student Activity Center! Native American Heritage Month

This month, we celebrate Native American Heritage Month. Since 1990, Native American Heritage Month has been celebrated to recognize the heritage, culture and experience of Indigenous peoples both historically and in American life today. National Cake Day

It’s almost that time of the year of holiday parties and festivities. Why not bring a cake as dessert? Celebrate National Cake Day on Nov. 26 by trying one of the recipes below:

Rico Salgado, SDSU Children’s Center Food Services Supervisor

This cake is far and away my favorite. It is a devil's food chocolate cake with raspberry filling. Here are the ingredients and pans you will need to execute this easy to make cake. 

Devil's Food Chocolate Cake with Raspberry Filling

Chocolate Cake

Ingredients:

2 boxes devils food chocolate cake
1 cup oil
6 eggs (large)
1 teaspoon vanilla extract
2 cups of milk (do not use water)
2 tablespoons sugar 
1/2 teaspoon baking powder 
20oz jar raspberry preserves 

Equipment:

3 nine inch round cake pans
4 sheets parchment paper 
Non stick spray 
Metal whisk

Directions:

  1. Preheat oven to 368 degrees (more on this temp in a second).
  2. Spray pans generously with non-stick spray and cut circles to cover bottom of pan. With the fourth sheet cut straps and stick to walls of pans. Set aside.
  3. In a large bowl, combine all wet ingredients and whisk together for a minute. Add sugar, baking powder and then cake mix and mix in small batches. Continue mixing until cake mixture is fully integrated. Divide equally between all 3 pans.
  4. Once poured evenly, shake pans with batter gently on the counter to release all air bubbles. Do this for 45 seconds per pan.
  5. Place all 3 pans on the highest rack in the stove (about 8 inches from the top of the oven). Though the box says to cook for 26 minutes, go with 32 minutes. The reason for that is because we used milk instead of water. Milk takes longer to cook and evaporate than water and also makes a super rich cake.
  6. At 32 minutes, turn off the oven and allow them to rest in the oven for 10 minutes. DO NOT OPEN DOOR! This will make your cake domes collapse.
  7. After 10 minutes, cut dome and refrigerate (use them for cake pops) and layer the first cake with raspberry preserves and then add the second layer. Add the third layer smooth side up and use cake spatula to apply frosting. If you have a piping bag, add decorations if desired and fresh berries.

Everyone in our house loves cake. Even our four legged family members love cake. Every year, I make a cake for our pug Rosco for his birthday. It's become somewhat of a tradition (11 years later) and our neighborhood dogs get to enjoy it as well. After the candles are blown out, it's consumed in a matter of seconds. All edible ingredients for humans, but there's no sugar so it tastes like a very healthy muffin.

Peanut Butter Carrot Doggie Birthday Cake (from AllRecipes)

Ingredients:

1 egg
1/3 cup honey (Optional)
1/4 cup peanut butter
1/4 cup cooking oil
1 teaspoon vanilla extract
1 cup shredded carrots
1 cup whole wheat or white flour
1 teaspoon baking soda

Directions:

  1. Preheat the oven to 350 degrees F. Grease a 6-cup ring mold or fluted tube pan.
  2. Combine egg, honey, peanut butter, oil and vanilla in a large bowl; blend well. Stir in carrots until well-combined. Sift together flour and baking soda and fold into carrot mixture. Spoon cake batter into the prepared pan.
  3. Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 40 minutes. Let cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

A.S. Book Club

The December Book Club meeting is on Wednesday, Dec. 7 at 4:30 p.m. on the Oggi’s Patio in the Union! 

At the meeting, the A.S. Book Club will be discussing “A Man Called Ove” by Fredrik Backman

“Meet Ove. He’s a curmudgeon—the kind of man who points at people he dislikes as if they were burglars caught outside his bedroom window. He has staunch principles, strict routines, and a short fuse. People call him ‘the bitter neighbor from hell.’ But must Ove be bitter just because he doesn’t walk around with a smile plastered to his face all the time?

Behind the cranky exterior there is a story and a sadness. So when one November morning a chatty young couple with two chatty young daughters move in next door and accidentally flatten Ove’s mailbox, it is the lead-in to a comical and heartwarming tale of unkempt cats, unexpected friendship, and the ancient art of backing up a U-Haul. All of which will change one cranky old man and a local residents’ association to their very foundations.

Fredrik Backman’s beloved first novel about the angry old man next door is a thoughtful exploration of the profound impact one life has on countless others. ‘If there was an award for Most Charming Book of the Year, this first novel by a Swedish blogger-turned-overnight-sensation would win hands down’ (Booklist).”

In addition, “A Man Called Ove” will soon be a movie starring Tom Hanks. The release date is Dec. 25 with a slight title change, “A Man Called Otto.”

For those who would rather listen to a book, the San Diego Public Library offers eBooks and/or audiobooks, for most titles. You just need a library card, which is free. The books also are available through an app: Libby App: Free ebooks & audiobooks from your library by OverDrive.

  1. What is your name and title?
  2. Isabel Richter, Supervising Teacher

  3. Which A.S. department do you work in? 
  4. SDSU Children’s Center — I provide administrative and in classroom support to the children, families and staff of the SDSU Children’s Center in the Transition Cottage.

  5. How long have you worked for A.S.?
  6. 13 Years

  7. What do you like most about working for A.S.?
  8. The sense of community and the diversity of staff and experience.

  9. Do you collect anything? What do you collect?
  10. Kinda, but my husband wishes I didn’t. I really like unique panda items. I really feel connected with the pandas. I would almost say they are my spirit animal — they sleep, eat and repeat — hahaha. But really, the species is a symbol of peaceful and gentle strength. 

  11. What is your favorite dessert?
  12. My favorite dessert would be cheesecake. I love it so much it was what my wedding cake was made of. I really enjoy the creamy texture and love how many different flavor combinations can be made. Wonder if they would make a maple bacon cheesecake?

  13. Do you prefer pens or pencils?
  14. I honestly prefer pens, but love the erasability of a pencil. So at this point I solely use the Frixion Ballpoint Pen by Pilot. I advertise this pen to anyone and everyone. Pilot might as well sponsor me at this point. During Teacher Appreciation Week a couple of years ago, I gave everyone one of these pens. So if you haven’t tried it yet, you should. It will blow your mind. Except don’t laminate something written in this ink, sadly the heat will erase your document.

  15. What is your favorite book? 
  16. I honestly love a variety of different children’s books, I can’t pick one. I am a teacher. But for my adult mind, I have really enjoyed comedic self-help books. A good example is "He’s Just Not That Into You," by Liz Tuccillo. This was very different from the movie. I also liked "What He Can Expect When She’s Not Expecting," by Marc Sedaka or "What You Can Expect When You’re Expected" by David Javerbaum. These books play off the book series "What To Expect When You’re Expecting," by Heidi Murkoff, but they take different perspectives.

  17. If you could start a charity, what would it be for?
  18. I hope one day to start a charity or program to help older dogs find forever families and homes. Each of the dogs I’ve adopted have been over the age of 5 and I’ve loved each so very much. Though they were on the older end, they still had so much love to give.

  19. Would you rather be a superhero or the world’s best chef? 
  20. I’m a superhero. Isn’t that what teachers are? 

  21. What type of pets do you have and what are their names?
  22. Hahaha, I definitely have different types of pets. I have five pets at home but it was once nine. I currently have two guinea pigs, Mallow and Momo, two cats, Benny and Bruce, and one pup, Nicos. 

  23. What is your favorite breakfast food?
  24. For breakfast, I enjoy crepes. Especially the Tahitian Dream Crepe from The Original Pancake House. I think it’s the texture of the crepe that I really like.

  25. “Most people don’t know that I like to…
  26. …dance. I’m really big into hip hop. I dance at a studio in Old Town quite often throughout the week. I even plan to have a dancing baby shower at the studio, so I can boogie down one last time before my baby makes his arrival.”

  27. When you visit the Zoo, which animal do you make sure you see?
  28. Hmmm I don’t know…hahaha…it used to be the pandas. I still go down to where they used to be just to stay consistent. I just visit the red pandas instead. 

  29. Would you rather speak all languages or be able to talk with animals?
  30. I would definitely talk with animals. We share the world together and I would love to know how we can be better together.
