Hello A.S. Family,

Welcome to the fall semester! Thank you for all you've done and continue to do for Associated Students during these ever-changing COVID times. We could not continue our mission and work at A.S. without you.

This year's executive officers are excited to announce the Year of CommUNITY. We have realized, over our time apart, what continues to keep our students engaged, passionate and connected is our COMMUNITY. Our goals are best achieved when we are all united, and this year being back together in person with the greater campus community is a time full of opportunity and limitless potential. The tagline for this year's theme is It Starts With Us because any one person can aim for unity with their entire being but it takes multiple people and all A.S. leaders, employees and staff to make it happen.

We are excited to connect with you and accomplish many great things together this year.

Celebrate Latinx Heritage Month!

This September, we celebrate Latinx Heritage Month! Latinx Heritage Month officially begins on Sept. 15 and celebrates and honors the contributions and influence of Latinx Americans on the history, culture and achievements of the United States.

Celebrate Latinx Heritage Month by reading personal stories from two of our Latinx employees and make one of the recipes they have shared with us!

My mother passed away earlier this year, but I will be eternally thankful and grateful for the many things she taught me in the kitchen. Cooking for me is not a love, but a passion, and we regularly drove out of our way to try a new restaurant. The small things my mom taught me in the kitchen laid the foundation for the many things I do in my dishes today. So while she may be gone, she lives with me in spirit as I would never be able to execute many of the complex gourmet dishes that I make regularly and share with friends, either in person or over social media.

One of the dishes that I learned from my mother is a guisado that I want to share with you. This recipe dates back to the 1500’s in Spain and although it has many variations, the core ingredients remain the same. Guisado comes from the Spanish word guiso, which is a technique of searing and braising a protein and cooking it in a sauce alongside other ingredients. The dish can steam or sit on low heat for extended periods of time, which extends its viability to be served throughout the day as a full meal for lunch or dinner, or in a smaller serving in a taco. This flexibility makes guisados a popular food option throughout Mexico and are mainly served in “fondas” (compact sit down style eateries), which offer the diner many different meal options and creates an endless combination of choices. This dish has so few ingredients — it’s hard to believe that such simplicity can yield such richness. With tacos enjoying such immense popularity in the U.S. right now (Taco Tuesday), this is a very popular option at fondas as a meal or a taco. Try this for your next dinner gathering or for Taco Tuesday!

 

Chicken Guisado with Potatoes in a Tomato and Chipotle Adobo Sauce

Ingredients:

2 tablespoons olive oil

6 yukon or rose gold potatoes cut in eighths

4 boneless, skinless chicken thighs

1/2 cup raw almonds

2 tablespoons chipotle adobo (the sauce in chipotle peppers)

1 - 6 ounce can tomato paste

1 generous pinch of dried thyme

3 cloves of garlic, finely chopped

3 bay leaves

2 cups chicken broth

Directions:

In a large non-stick pan on medium high heat, add oil and brown potatoes. Once browned, remove potatoes from pan and brown chicken. Once chicken starts to brown, add almonds, and return potatoes to pan. Sir in chipotle adobo (add whole peppers for a spicier dish) and then add tomato paste, pinch of thyme, chopped garlic and bay leaves and stir until evenly distributed. Add chicken broth, reduce heat to medium and cover. Cook covered for 20 minutes. Turn off heat and allow dish to rest for 15 minutes. Serve with rice or warm tortillas to make tacos.

As a first-generation American born to Mexican Immigrants, it has always been very important that I preserve the history and traditions taught to me by my parents and grandparents. As with most cultures, food and family gatherings played a central role in our traditions. In my family, comfort food and cooking together has kept us connected to our heritage.

One of my favorite comfort foods is my mom’s Mexican meatball soup. She was very gifted at making soups, but my all-time favorite was her Caldo de Albóndigas. It is easy to make and is even better as leftovers the next day. Enjoy!

 

Caldo de Albóndiga (Mexican Meatball Soup)

Ingredients:

2 tablespoons of extra virgin olive oil

1 large onion, chopped

1 large garlic clove, minced

2 quarts of chicken or beef stock

1 quart of water

1/2 cup of diced tomatoes

2 large carrots, peeled and sliced

1/3 cup raw white rice

1 pound of ground beef

1/4 cup of chopped parsley

1-1/2 teaspoon salt

1 teaspoon black pepper

1 egg

A small pinch of cayenne 

1 teaspoon of dried oregano or 1 tablespoon of fresh chopped oregano

1/2 cup chopped fresh cilantro

1 lime

To make the soup broth:

Heat oil in a large pot over medium heat. Add onions and cook for about 4 minutes. Add garlic and cook for another minute. Add the stock, water and diced tomatoes. Bring to a boil and reduce the heat to low.  Add the carrots.

To make the meatballs:

Mix the rice into the meat and add parsley, salt and pepper. Then, mix in the raw egg and form the meat into 1 inch meatballs. 

Add the meatballs, one at a time, to the simmering soup. Cover and let simmer on low for 30 minutes. At the end of the half hour, add a few pinches of oregano, and salt, pepper and cayenne to taste.

Garnish with chopped cilantro and a squeeze of lime.

A.S. Food Pantry

Now Open!

The A.S. Food Pantry is now open again for the school year! The A.S. Food Pantry provides nutritious food and food program referral services for SDSU students experiencing food insecurity.

The Food Pantry now has a more permanent location: the North-East Landing on the second floor of the Aztec Student Union. Services are available Wednesdays from 10 a.m. to 2 p.m., Thursdays from 2 p.m. to 6 p.m. and Fridays from 8 a.m. to 12 p.m. No reservation is required.

ARC Membership

We are happy to announce that an ARC membership is now included for all enrolled SDSU students! In addition, we have implemented a new barcode system to replace the hand scanners and prevent the spread of COVID-19. To check-in to Aztec Recreation facilities, you must use the barcode provided on the Aztec Rec app, available on the App Store or Google Play. Follow the steps below to get your barcode to access all ARC facilities:

If you are an SDSU student and have never been an ARC member:

  1. Check your SDSU email for a message with the subject: "Aztec Recreation Login Credentials"
  2. Using the username and password given in the email, login to the “Aztec Rec” mobile app

If you are a full-time employee and have never been an ARC member:

  1. Contact Vicki Greene at vgreene@sdsu.edu to get your account activated

If you are a past ARC member:

  1. On the Aztec Rec app home screen, select “Do not have a login?”
  2. When prompted, enter your member number (RedID) and SDSU email
  3. You will then receive an email with the subject “Login Credentials”
  4. Return to the app and enter your username and temporary password
  5. When prompted, create your permanent password

  4. I work for Union Programs and Services and I coordinate and develop programs and events. I have also been adopted into assisting with the A.S. Food Pantry. 

  5. How long have you worked for A.S.?
  6. 1 year and 9 months.

  7. What do you like most about working for A.S.?
  8. I love being able to assist students and colleagues with bringing their event visions to life. I also love the support my team offers and I know I can always ask questions and seek help when needed. 

  9. What was the last movie you saw? Thumbs up or thumbs down? 
  10. Marvel’s Black Widow, I cried — thumbs up. 

  11. What is your favorite dessert? 
  12. Flan, it’s such a yummy custard! I don’t like cake so every year for my birthday I get flan instead.

  14. Mazatlán, Sinaloa. I want to have regional shrimp ceviche by the beach.

  18. We are a husky pack family! My parents have two huskies and my husband and I have a half husky, half dingo puppy. They love talking to each other!
